Ingredients:

For the misal:

1 cup sprouted moth beans (matki)
2 tablespoons oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
A pinch of asafoetida (hing)
1 onion, finely chopped
2 tomatoes, finely chopped
2 tablespoons misal masala (a spice blend specific to Misal Pav)
1 spoon red chili powder ( to taste)
1 teaspoon turmeric powder
Salt to taste
Water as needed
Coriander leaves for garnish


For the farsan:

1 cup mixed farsan (sev, chiwda, or any savory snack mix)

as per needed


For the pav:

6 pav (soft bread rolls)
Butter for toasting

as per needed


For the garnish:

Chopped onions
Chopped coriander leaves
Lemon wedges


Instructions:

In a pan or kadai, warm the oil over medium heat. Add mustard seeds and let them crackle. Then add cumin seeds and asafoetida and sauté for a few seconds.

Once the onions are added sauté them until they are transparent.

Then add chopped tomatoes and simmer until they get soft and mushy.

Add misal masala, red chili powder, turmeric powder and salt. Stir thoroughly then heat for a minute to let the flavours meld.

Add the sprouted moth beans and mix well. Add water cover the pan, and let it cook for about 15-20 minutes or until the beans are tender.

Meanwhile, lightly toast the pav rolls with butter on a griddle or in a toaster.

Once the misal is cooked adjust the consistency by adding more water if needed. To enable the flavours to come together cook for a few more minutes..

Place a spoonful of the misal in a serving bowl to be served.Top it with a generous amount of farsan, chopped onions, and coriander leaves.

Serve the misal pav with the toasted pav rolls and lemon wedges on the side.
